Spring Semester is almost over and that means that I am in the midst of final exams. While I should have spent this beautiful thursday evening studying, the weather prohibited me from staying in the library. Instead I decided to make a refreshing strawberry mojito to sip on while making pizza for dinner. The mojito was like any simple recipe except instead of muddling the strawberries with the lime and mint, I decided to just puree them. The end result was still amazing and most of all refreshing. The pizza was a simple goat cheese, arugula, and mushrooms on whole wheat crust.
