Bloody Mimosa

What can be better than a lazy sunday brunch? Nothing! especially when mimosas are involved. Since I had some left over champagne from my birthday, mimosas sounded like a great idea. Instead of using regular orange juice, I subbed it for blood orange juice. I retrieved some oranges from a nearby tree and squeezed some fresh juice. The blood oranges were a nice twist and paired great with a frittata.
